Alila Kothaifaru Maldives Revives the Spice Garden Experience with Garden-To-Table Culinary Delights
Alila Kothaifaru Maldives unveils its newly reimagined Spice Garden, a flourishing testament to sustainability, sensory discovery, and culinary creativity. Under the dedicated care of in-house horticulturist Zabih and the culinary vision of Executive Chef Frank, this lush garden has become the heart of the resort’s garden-to-table philosophy, directly influencing the evolution of the guest dining experience, most notably, the newly enhanced Lazy Lunch menu.
Nestled within the resort grounds, the Spice Garden has undergone a significant transformation, becoming a vibrant hub of organic herbs, spices, and edible plants that now find their way onto the plate just hours after harvest. This fresh, homegrown produce has redefined the culinary landscape at Alila Kothaifaru, especially in the Lazy Lunch menu, where seasonal variety and authentic flavours now take centre stage.

“Our revamped Spice Garden menu has enabled us to incorporate even more local harvest products into the Lazy Lunch,” shares Executive Chef Frank. “The use of freshly picked herbs and produce enriches the flavours of our dishes, enhances their nutritional value, and truly brings the garden-to-table concept to life. It also gives our chefs the creative freedom to adapt menus with the changing seasons, always offering something new and inspiring.”
To bring guests closer to this philosophy, Alila Kothaifaru Maldives has also introduced a complimentary activity for their guests-the Spice Garden Walk, led by local horticulturist Zabih, whose passion and meticulous care have shaped the garden into a living classroom and sensory sanctuary. Guests are invited to touch, smell, and taste a range of tropical herbs and spices while learning about their origins, uses, and impact on the local ecosystem.
“Reconnecting with nature is at the heart of the Spice Garden experience,” says Zabih. “By engaging all the senses, we aim to create vivid and lasting memories that deepen each guest’s appreciation for the food they eat and the environment around them.”

While the tour and Lazy Lunch are separate activities, they complement one another in offering a holistic experience, from discovering where ingredients grow to savouring their flavours in carefully prepared dishes. The garden continues to inspire seasonal dishes, spotlighting the resort’s commitment to sustainability, wellness, and locally sourced produce.
General Manager Thomas adds, “At Alila Kothaifaru Maldives, we believe in creating experiences that are not only memorable but also meaningful. The Spice Garden represents our commitment to sustainability and cultural connection, while offering guests the chance to explore the journey from garden to plate in a truly immersive way. It’s these thoughtful touches that make a stay with us feel personal, enriching, and refreshingly different.”
Whether wandering the fragrant paths of the garden or savouring a sunlit lunch infused with just-picked ingredients, guests are invited to embrace the connection between food, nature, and place-making every bite a celebration of the island’s bounty.
